So it is no secret that I love eggplant fritters. The pan friend yummy goodness that when done right is perfectly melt in your mouth delectable and are not half bad for you. When I go to an Italian restaurant, there is very little deciding if they have fritter on the menu. But while I enjoy them plain, I equally enjoy them smothered in marinara sauce.
That’s where the sandwich comes in. Its another delicious way to enjoy my eggplant fritters. Even my meat loving husband and son enjoy them.
Ingredients:
Eggplant Fritters (see this post for my recipe)
Marinara Sauce (learn more about my Semi Homemade Spaghetti Sauce in next week’s Monday Munchies)
Hoagie Rolls or Sourdough Bread Slices
Provolone or Mozzarella Sliced Cheese
Assembly:
1. Slice and spread open hoagie roll.
2. Layer sliced cheese, marinara sauce, eggplant fritter sliced in half, marinara and lastly sliced cheese.
3. To aid in the melting of the cheese, either stick under the broiler until the cheese melts or in the microwave.
4. Serve and enjoy!!!
