Sometimes you have to go for the really simple but feels very special meal items and this Monday Munchies is one of them. I generally want to make my meals special and give a little extra to them. But there are some days that the vegetarian white sauce lasagna just is not happening. Just because its not complicated, doesn’t mean that it can’t be special in my book. This Honey Glazed Carrots recipe is just that.
1 bag of baby carrots
1 cup of honey
2 tablespoons of butter
Putting It All Together:
1. Steam one bag of baby carrots. Once to your desired level of doneness, remove and set aside.
2. In a separate pot or in the same pot you steamed the carrots (just remember to drain it first), over a low heat, melt the butter into the honey. As you do so, the honey will become thinner.
3. Once the honey and butter are combined, add steamed carrots to the pot. Stir so all the carrots are covered in the honey glaze. Let them simmer for about 10 minutes. Serve warm.
Just a touch of special but a very simple Monday Munchies. And the best part, at least with my family, these honey glazed carrots get devoured and second helpings are always consumed.
