Summer is pretty much here in Southern California except for the alternate personality our weather occasionally decides to display. And summer means enjoying fresh salad greens, succulent fruit and juicy vegetables kissed in flavorful dressings.
Some of my favorite salads are those that combine fruits and vegetables. That perfect blend of sweet with bitterness and tart. It’s unexpected yet some how just works. And recently I have been craving Asian influences such as ginger, edamame, tofu…yum! This salad met all my flavor palate needs and was a family pleaser all around. I’m sure yours will love it too!
Organic Fresh European Greens
Organic Blueberries – one small container
One can of drained Mandarian Oranges
Two cups fresh cut Green Beans
One cup Cashews
One cup Ginger Garlic Wonton Strips
Quarter cup Blue Cheese Crumbles
Lighthouse Toasted Sesame Ginger Dressing
Putting It Together:
1. Mix greens, blueberries, Mandarian oranges, green beans, cashews, and blue cheese.
2. Serve individual servings.
3. Add dressing and then top with wonton strips.
