I love family traditions. I love family mementos. I love family memories. I love family keepsakes. But most of all, I love family recipes. Those taught from mother to daughter to granddaughter. They bring with them family’s heritage, family’s love and family’s connectedness. One of my favorite family recipes comes from my grossma (my great grandmother from Germany). Wish I could tell you the German name for it but it was always creamed cucumber and onions.
And I had the biggest craving ever for it recently. Besides the wonderful memories that fill my mind, what I love about this dish is the simplicity of it. It’s fast and easy and uses pantry staples. It’s perfect for summer too. With temperatures rising here in So Cal, it’s a great go to salad for lunch or a summer side dish.
One cucumber, peeled, sliced and cut in half
One white or sweet onion, thinly sliced and cut in half
1/2 cup of cream
2 tablespoons of white distilled vinegar
1/8 to 1/4 teaspoon sugar
Putting It Together:
In a medium sized bowl, mix cream, vinegar and sugar until well combined. Taste. If there is a mild sweet and sour flavor, then you are done. If too sweet, add a little more vinegar. If to vinegary, add a little more sugar. Too strong either way, add a little more cream. Once the cream sauce is ready, add the cucumbers and onions. Mix until well coated. Chill until you are ready to serve.
