Casseroles are the ultimate weekday dinner solution. They make a lot of food that is great for leftovers, they’re simple to throw together, and they usually result in great leftovers. Plus, I love the minimal cleanup afterwards. This is a list of 16 of my favorite easy and yummy casserole recipes that are perfect for weeknight dinners.
